I am building myself another new computer, and having experienced HDD failures, I want to protect myself against them.
At current, I have 2x 2TB drives in my PC. 1 is partitioned up for the OS and DATA, and the other drive is to store backups.
However, I would like to use RAID in my new computer.
This is the RAID layout I am looking for:
Drives 1 & 2 (2x 1TB Drives, SATA) in RAID1 for the OS.
Drives 3,4 & 5 (3x 2TB Drives, SATA) in RAID5 for my DATA.
Drives 6 & 7 (2x 2TB Drives, SATA) in RAID1 for Backups.
Now, I had a quick look but couldn't see any 7 port raid cards that would do this. Is this possible, any cards you would recommend?
Or, can I use more than one RAID card in my PC. Say, a 5-port one and then a 2-port one?

You are wastefully overkilling the situation.
Re: Drives 1 & 2:
Your OS with your favorite applications would never exceed 60GB let alone 2TB.
I would recommend smaller drives and create a RAID-0 array and short stroke it. Divide into 2 partitions, one to hold your OS, favorite apps, and the other for temporary "scratch work."
Then use a good backup program like Acronis True Image Home to make an image of this setup.
Re: Driver 3, 4, and 5:
Your data doesn't have to be in a RAID 5. What is data in your case? Music? Videos? Book reports? Homework? Excel worksheets? All you need is 1 internal drive and an external USB backup disk.
You would only need RAID-5 for Enterprise level database accessing by multiple users connecting up to your computer.

All you need is an external USB backup disk and store it in another location.
What you have setup is what we call a point-source failure. If a fire were to erupt you would lose EVERYTHING. If someone stole your computer, you would lose EVERYTHING.
Better to have external USB backup drive and put that drive somewhere else.
